Here at Talbot HQ one of our new year’s resolutions was to get our healthy bake on…and whilst some resolutions fade quicker than our summer tans, this is one we’ve actually kept up with! #proudtalbotgirls .  One of our favourites from our ever-growing recipe book is our banana bread.  Look no further, in true Talbot style, this B bread will no doubt have you going in for a double slice…

Trust us with this one, follow this recipe and you’ll too enjoy this beautiful moist, flavourful and healthy loaf.  We’ve even sprinkled some coconut and walnuts in it to make it just that extra bit delicious for you 😉

Ingredients For The-Talbot-Girls-Go-To-Banana-Bread

    • 1/2 cup almond flour
    • 1/2 cup coconut flour
    • 1/2 tsp ground cinnamon
    • 1 tsp baking soda
    • 1/4 tsp salt
    • 1/3 cup melted coconut oil (measure after melting)
    • 1/4 cup honey
    • 4 large eggs, preferably organic, lightly whisked
    • 1 tsp pure vanilla extract
    • 3 medium-large very ripe bananas, well-mashed
    • 1/2 cup shredded unsweetened coconut
    • 1/3 – 1/2 cup crushed walnuts


  1. Preheat oven to 175°C. Lightly grease a loaf pan. Line the bottom with a piece of baking paper cut to fit.

  2. In a large bowl, whisk together first 5 ingredients (almond flour through salt).

  3. In another large bowl, whisk together melted coconut oil, honey, eggs, and vanilla extract. Whisk in mashed banana.

  4. Stir wet ingredients into the dry and stir until fully combined. Fold in shredded coconut and walnuts.

  5. Evenly spread batter into prepared loaf pan. The batter will be rather thick.

  6. Bake for 40-45 minutes, or until a wooden tester inserted into the center of the bread comes out clean.

  7. Leave in the pan for 10 minutes to cool.  Carefully remove and serve!
